Trapani, at western Sicily, home of some of the oldest salt marshes in Europe...Drawing salt from water remains a long, slow process. Flat marshlands and the dry, hot weather make the area perfect for harvesting sea salt have made Trapani famous throughout the Mediterranean for its high quality salt, a reputation, which in the Middle Ages made it the target for raiders and conquerors.
Passing through a series of big pools, the seawater evaporates and leaves salt. It is, then, raked and dried under the hot Sicilian sun. Clean sea, sun, and wind are the only ingredients used to obtain this unrefined sea salt...
