Небо можно поменять. Тут проблема серьезнее чем просто "burned out sky" - очень высокий шум, включая цветовой. Это особенно отчетливо видно, если присмотреться к облакам.
Тут я несколько подавил шум в фотошопе и в Фототулс наложил поляризационный фильтр
Но проблемы полностью не устранены - надо работать с оригиналом.

Always take your pictures in RAW, never in JPEG. Gives you more space with light and shadows later. With a burned out sky you can use highlight filter in photoshop but be careful because the use of this filter gives unnatural colors. So make a selection of the sky only and use highlights only on the sky, not on rest of picture.
When the sky is really burned out (like here on left side) there is not much you can do. In future take several shots at different settings (buy a small and light tripod to take with you on walks...) and you can blend them to one perfect shot! 
Hi roadrunner. It was one of those occasions, when you are on the road, in a hurry, it is getting dark and you still have 600 km to drive. Then you see something that catches your eye. You stop the car, pull the camera out from the back seat, make a couple of shots and hit the accelerator again. Later you realise that all the settings where wrong and making it worse, picture control setting was in jpeg. I do have a couple of tripods though and even use them occasionally. I greatly appreciate your comments
